Winemaking Notes: Grapes are fully destemmed and then allowed to macerate for one week. Fermentation takes place in a temperature controlled stainless steel tank over a period of 7 days with one punch down per day. The juice is then racked to a cement tank and allowed to rest for 5 months. It is lightly fined and filtered.
Producer Notes: Domaine de Rochebin consists of 50 hectares of sustainably farmed vines located in Aze, the heart of the Mâconnais. The domaine was established in 1925 and has always been committed to low intervention practice in the cellar that respect the tradition of the region.
