This Pet Nat is left undisgorged, and we produced a limited quantity of only 60 cases.During the early stages of the 2019 harvest, we collected wild Dolgo crabapples from the Catskills region and began fermenting them alongside wild 'disco' pears in glass demijohns. As the fermentation process was underway, we carefully bottled the cider, incorporating a blend of sustainably grown Cortland and Macs from a 2018 wild fermentation. The result is the 2019 Disco Nat, a cider with a rebellious and explosive character, which made its debut at the Peripheral and Wild World Festivals.
