Crafting process: The grapes undergo a captivating transformation, beginning with a carbonic maceration that lasts for a tantalizing five days. This is followed by a two-week whole-cluster maceration, where skilled hands perform daily punch-downs to extract every nuance of flavor. The precious juice is then pressed into a harmonious blend of neutral French oak barrels and a singular chestnut barrel, where it ages gracefully for an impressive span of 10 months. Throughout this maturation period, there is no disturbance or stirring, allowing the wine to evolve undisturbed. Just before bottling, a small, measured dose of 10ppm SO2 is added, ensuring its impeccable preservation.
